Mumm Cordon Rouge
Ingredients
- 400 g assorted heirloom tomatoes
- 100 g black or red cherry tomatoes (beefsteack tomatoes)
- 200 g fresh ricotta cheese
- 4 tablespoons olive oil
- 1 small bunch basil
- 1 tablespoon mild raspberry vinegar (optional)
- Fleur de sel
- Freshly ground black pepper
Recipe
Directions
1. Blend the olive oil with the basil leaves until you obtain a bright green oil. Strain through a fine sieve. Whisk the ricotta with 2 tablespoons of basil oil and a pinch of salt.
2. Cut the tomatoes into quarters or slices, depending on the variety. Remove the seeds from the cherry tomatoes and cut them in half.
3. Place a spoonful of ricotta at the bottom of each plate. Arrange the tomatoes and cherries harmoniously. Drizzle with basil oil and, if desired, a few drops of raspberry vinegar. Finish with fleur de sel and a twist of pepper.
