Ingredients
- 16 fresh oysters
- 100 g watermelon, finely diced
- 1 lime (juice and zest)
- 3 tablespoons olive oil
- 1 sprig fresh thyme
- 2 shallots, finely chopped
- Salt, freshly ground pepper
- 100 g watermelon for the balls
Recipe
Preparation steps:
1. Open the oysters and arrange them on a bed of ice.
2. Prepare the mignonnette: mix the diced watermelon, chopped shallots, lime juice and zest, salt, and freshly ground pepper.
3. Gently heat the olive oil with the thyme, allow to infuse, then strain.
4. Spread the mignonnette over the oysters.
5. Drizzle with thyme-infused olive oil.
6. Use a melon baller to shape the watermelon into balls and arrange on plates to accompany the oysters.

Mumm Rosé
The sweet and sourish freshness of the watermelon and lime mignonnette, enhanced by shallots and pepper, brings out the delicate iodine flavor of the oysters.
The watermelon balls add an extra touch of sweetness and freshness, perfectly balancing the fruity roundness and liveliness of Mumm Rosé.
